The Perfect Curried Corn Recipe
Curried Corn Recipe
3 ears of fresh corn (cut off the cob) or 2 cups of frozen
2 tablespoons extra virgin olive oil
½ tablespoon of curry powder
1 clove of minced garlic
1/2 small onion
1 cup of sliced Portobello mushrooms
½ cup of strained Greek yogurt
salt and pepper to taste
Parmesan to top (just ‘cause and optional)
handful of fresh spinach to use as the bed (optional)
Add oil to a pan on medium heat.
Add corn, garlic, curry, mushrooms, onions, salt and pepper to a pan or wok. Sautee until onions are tender about 5 minutes.
Cover and let steam for 3 minutes.
Remove from heat and add yogurt in slowly and be mindful of curdling. Incorporating slowly!
Serve on a bed of fresh spinach. Hit it with a kiss of Parmesan!
