Coca-Cola Marinaded Skirt Steak Fajitas

One decent size skirt steak

1 20 oz. Coca Cola

1 Tablespoon cumin

1 Tablespoon olive oil

1 Tablespoon red pepper flakes

One fresh lime (halved and juiced)

splash of vinegar

splash of soy sauce

Grill prep:
1/4 cup brown sugar

Assembly Goodies:
tortillas for wrapping, cheese for cheesing, sour cream for smothering, grilled onions and peppers for the just ’cause, guacamole for loving and salsa and hot sauce for jump starting!

This is a super easy marinade. Mix all of the above in a Ziploc bag(lime peel and all), and let it sit overnight.

Remove the meat from the marinade at dry the meat off. Really dry it off. You should actually let it sit out for 30 minutes or so. That will give you time to get the grill lit and blazing. You want a super hot grill. Once the grill is blazing take the skirt steak and rub the brown sugar on both sides. Get it in there nice and covered.

Throw the steak on the grill and give a really good sear (I like my meat rare/medium rare). I did 2.5 minutes on one side and two minutes on the flip side. Your cooking times will vary so cook it how you like it. Take it off the heat and cover it in a foil tent and let it rest for 15 minutes.

After the meat has had a chance to sit/rest/nap, slice it super thin, opposite the grain at a bias. Thin slicing adds to the tenderness and makes it easier to make fajitas with.

That’s it…roll up the sliced meat in a tortilla or throw it on some fresh mixed green for a Kick-Ass Fajita Salad, I actually did both!
